After a cool, morning, harvest, the grapes were hand-sorted into open-top fermenters where they macerated as whole berries for five days. After two-to-three weeks of fermentation with native yeast, the wine was gently pressed and transferred to French oak barrels (85% new) where it finished primary and secondary fermentation then aged for another 18 months. This dark, opaque Cabernet opens with aromas of iron and shale at play with ripe cherry, fresh cassis and a hint of rose oil. Smooth tannins support the deep, tarry palate of red cherry and black licorice, and the finish lingers with notes of cigar, cedar and spice. Will benefit from aging up to 20 years.
